Crock Pot Potato Soup

My friend Trish came to visit for the Nebraska @ Michigan game this weekend (we only won 45-17...go blue!) and I wanted to make something easy but tasty for us to snack on throughout the day so I made my own version of a baked potato soup recipe from http://www.mamalovesfood.com (Warning: It tastes a lot better than it looks)



Crock Pot Potato Soup
(portions can vary depending on the size of the crock pot)

3 large potatoes, peeled and cut up into cubes
2 cans chicken broth, whichever kind you prefer
3 peels off of an onion, cut up and diced into little pieces
2 cloves garlic, chopped up and crushed
1 package cream cheese
Splash of Italian/Everyday seasoning

I took all of this and cut it up and threw it in the crock pot. Cook for about 6-8 hours on low and enjoy! Make sure the cream cheese is dissolved before serving. If you use low fat or fat free cream cheese it is harder to dissolve, so it doesn't look as good, but it still tastes great! I used Philadelphia 1/3 fat cream cheese. Top with sprinkle cheese.

This was so good that I made some the next day with for my boyfriend! So easy and good. A must try.
